We have a fantastic new vacancy for a Junior Sous Chef for our Maldron Hotel Derry We are looking for a talented individual with strong experience within the hospitality sector.

Objective of the Role

Reporting to the Head Chef you will be responsible for running the kitchen in the absence of the Head Chef.  You will support the Head Chef in managing the kitchen team, and work with the team to meet and exceed our own very high standards within the kitchen.

We are looking for an experienced and qualified Junior Sous Chef to assist the Head Chef with bringing creativity to the department, and ensuring passion and standards are at the forefront of everything that we do.  The junior Sous Chef will support the Head Chef with ensuring all Health & Safety is maintained within the kitchen.

Key Duties and Responsibilities

  • Controlling and overseeing food service 
  • Assisting the Head Chef with creating menus and be familiar with popular trents
  • Ensuring all food being served is to standard prior to leaving the kitchen
  • Ensure the kitchen is compliant with all food safety and health and safety legislation 
  • Be able to handle any complaints and rectify to the satisfaction of our guests
  • Take responsibilty for team development and carry out neccessary training sessions
  • Participate in training as and when required
  • Be familiar with food costs and ensure targets within this area are maintained
  • Be familiar with ordering and ensure all stock levels are maintained 
  • Assist the head chef with rostering and time sheet compliance 
  • Comply with nutrition and sanitation regulations and safety standards
  • Be familiar with all food allergens 

Requirements:

The following essential requirements must be demonstrate on application:

  • A minimum of two years experience in a similiar position
  • Be fully flexible with working hours
  • Be passionate about cooking and food service 
  • Experience working with food costs and ordering would be an advantage 

Desireable

  • Catering qualification
  • Food safety management level three
